
These buckwheat pancakes are a weekend brunch classic!
*Makes around 6 pancakes
For the pancakes:
120g buckwheat flour
240ml unsweetened almond milk
80g mashed banana
1 tsp cinnamon
1 tsp vanilla extract
For the chocolate sauce:
120ml unsweetened almond milk
Handful pitted dates
1 tbsp raw cocoa
1/2 tsp maca powder (optional)

*Makes around 6 pancakes
1. Mix all the pancake ingredients together well.
2. Take approx. 60ml of the mixture to make 1 pancake and fry gently until you see small bubbles forming on the pancake then turn around.
3. To make the chocolate sauce, blend plant milk and dates in blender, then transfer to a pot and simmer for 5 minutes. Add cocoa, let bubble for another 2 minutes and your chocolate sauce is ready.
4. Serve the pancakes piled high with fruits and your favourite toppings. Pour over the chocolate sauce.
