This cherry compote is easy and delicious! Perfect for topping overnight oats, granola or yoghurt.

Whilst the prep time here might look longer than you might expect, a lot of this comes from simply waiting. But let us promise, patience is a virtue! Once you have left the sugar to draw in the cherries’ juices for half an hour, the flavours start to combine in the most delightful way. Sometimes knowing how delicious this is going to taste and having to wait (particularly if you use this as a topper for overnight oats) is the most difficult part!

Overall, this three ingredient recipe is one of the most rewarding simple recipes you can make.

Ingredients

2lbs ripe black cherries

3 tbsp caster sugar

1 tsp vanilla extract

Method

Stone and halve the cherries, place in a heavy-bottomed pan and stir in the sugar.

Leave for half an hour to let the sugar draw the juices.

Add the vanilla extract and place the pan on a medium heat, stir from time to time.  When the fruit has softened take off the heat and leave to cool before storing in the fridge.

Perfect with plenty of vanilla soya yoghurt as a quick pudding, or with chocolate overnight oats as a decadent breakfast.
