This Crispy Korean Tofu Burger from Angus & Oink, packed with spice and umami, truly punches above its weight.

Firm tofu is marinated, seasoned with Angus & Oink Korean Seoul Food seasoning, and fried to golden, crunchy perfection before being stacked in soft tiger bread rolls with kimchi, pickles, shredded lettuce, mayonnaise and a hit of Angus & Oink Wing King barbecue sauce.

Ingredients

1 block firm tofu, pressed and cut into four thick slices
1 tbsp soy sauce
1 tbsp vegetable oil
1½ tbsp cornflour
1 tbsp Angus & Oink Korean Seoul Food seasoning
2 tiger bread rolls, split
1 tbsp vegan mayonnaise
1 tbsp Angus & Oink Wing King barbecue sauce
Kimchi to serve
Pickles to serve, sliced
Lettuce to serve, finely shredded

Method

  1. Pat the tofu slices dry, then place them in a shallow bowl. Drizzle over the soy sauce and vegetable oil, turning gently to coat. Sprinkle over the cornflour and Angus & Oink Korean Seoul Food seasoning, tossing carefully until each slice is evenly coated and lightly dusted.
  2. Arrange the tofu slices in a single layer in the air fryer basket. Air fry at 200°C for 12–15 minutes, turning halfway, until crisp, golden and slightly puffed at the edges.
  3. While the tofu cooks, lightly toast the cut sides of the tiger bread rolls until golden.
  4. In a small bowl, combine the mayonnaise and Wing King barbecue sauce.
  5. To assemble, add some kimchi on the heel of the bun, followed by crispy tofu then pickles and shredded lettuce and a healthy dollop of barbecue mayo.
  6. Crown with the top half of the roll. Serve straight away while the tofu is hot and crisp, with plenty of napkins on hand.
