360g sliced apples
2 oranges, freshly squeezed
1 tsp cinnamon
Pinch of mixed spice
Pinch of nutmeg
Pinch of ginger
3 tbsp coconut sugar
Pinch sea salt
140g berries (elderberries, if you can find them)
For the Crumble:
180g rolled oats (use gluten-free if needed)
6 tbsp coconut sugar
35g sunflower seeds
30g pumpkin seeds
120ml cup coconut oil
Vegan ice cream, to serve

1. Slice the apples, and place in a baking tray with fresh orange juice or water, spices, coconut sugar and salt. Mix well.
2. Bake at 350F/180C for about 15 minutes, remove from the oven and then add the berries.
3. Make the crumble by mixing the oats, coconut sugar, seeds and melted coconut oil.
4. Place the crumble on top of the fruit, and bake until the topping is golden – around 30 minutes.
5. Serve with soya or coconut ice cream.
