There is a reason this combination is so popular the world over… Because it’s divine! And with the great pre-made falafel mixes that are around nowadays, this can also be a cheating chef’s quick fix any day of the week.
2 slices of good, fresh bread (obviously store-bought is fine, but so much about a good sandwich is about the bread!)
2. Hummus of your choice
3. Crunchy salad mix (chopped cucumber, grated carrot, chopped red pepper, finely chopped red onion)
4. Falafel (how many depends on the size of the patties and the slices of bread)

1. Generously spread the hummus onto both slices of bread
2. On the bottom slice, layer some salad mix
3. Then add the falafel patties on top – break them up so the sandwich is easier to close, and the hummus oozes into the cracks
4. Top with the other slice
5. Enjoy!
You might want to add a splash or two of hot sauce for an extra zing.
