Oh my Gosh! This deliciously nourishing recipe is a simple yet satisfying way to level up your lunchbox, work-from-home lunch or weekend midday pick-me-up, created by the team at Gosh!

It brings together wholesome grains, vibrant veg and Gosh! Beetroot Falafel, finished with a zesty lemon dressing and flavour-packed toppings for a lunch that feels fresh, filling and effortlessly tasty.

Ingredients

250g shop-bought pouch of mixed grains

1 red pepper, sliced and roasted (alternatively cherry tomatoes or sweetcorn)

4-6 spears of tenderstem broccoli

A handful of rocket & spinach

1 tbsp sauerkraut (alternatively, kimchi)

1 packet of Gosh! Beetroot Falafel

1 tbsp red pepper hummus

A pinch of pumpkin and sesame seeds

Dash of olive oil

Dressing 

Juice of ½ lemon

2 tbsp extra virgin olive oil

Salt & pepper

(Alternative dressing options: Sriracha vegan mayo or smashed avocado mixed with lime juice)

Pickled red cabbage & onion

¼ red cabbage, thinly sliced

1 red onion, peeled & thinly sliced

4 tbsp cider vinegar

Method

  1. Prepare the mixed grains pouch according to the instructions on the packet.
  2. Combine the dressing ingredients in a bowl and then stir through the mixed grains.
  3. To make the pickled onion and red cabbage heat on a pan for 2 mins with 4 tbsp cider vinegar, a pinch of salt, and cracked black pepper.
  4. Pan-fry the red pepper and tenderstem broccoli with a dash of olive oil, until slightly charred. Leave to cool.
  5. Arrange the grains, pickled red cabbage, sauerkraut, broccoli, red pepper, spinach and rocket in a bowl. Place the beetroot falafel and red pepper hummus on top.
  6. Finally, sprinkle with the pumpkin and sesame seeds.
