This mango and chia seed pudding could quite possibly be one of the simplest, guilt-free, good-for-you and tasty desserts you can make. Though patience is a virture.

Although it only takes a few minutes to make it has to be left refigerated overnight before you can consume. But don’t fret! Think of it like a treat to yourself like a Christmas present you wrap for yourself on December 24th before opening on Christmas Day!

Chia seeds are incredibly versatile and are thought to have great health benefits too. So not only is this a mouth-watering and delicious pudding, it also has various vitamins and nutrients. Mango is rich in vitamin C and contains antioxidants whilst Chia seeds bring omega-3 and fiber to the mix.

Ingredients

2 tbsp chia seeds

2 tsp peanut butter

1 mango, sliced and the juice

150ml almond (or other dairy alternative) milk

Preparation

These puddings take less than 5 minutes to make, but they need to be refrigerated overnight. If you like your desserts a little sweeter, 1 tbsp agave syrup would work well.

 

Method

1. Put all of the ingredients in a bowl and stir until well-combined.

2. Divide the mixture into two glasses.

3. Cover with cling film and place in the fridge overnight.

4. Now go to bed and dream of the delicious dessert you’ll be eating tomorrow!
