Ingredients

For the wrap:

1 pack Better Nature Peri Peri Tempeh, sliced or torn into long strips
1 large wrap or flatbread
A few crisp lettuce leaves

For the crunchy slaw:

½ small red cabbage, finely sliced
1 carrot, grated
2 tbsp vegan mayo
Juice of ½ lemon or lime
Salt + black pepper

Optional: 

Extra peri-peri sauce, for drizzling

Method

  1. Heat a non-stick pan over medium heat. Add the peri-peri tempeh and cook for 4-5 minutes, turning until golden, sticky and slightly charred at the edges.
  2. Toss the cabbage and carrot with mayo, lemon juice, salt and pepper. This will add a delicious crunch.
  3. Warm the wraps. Layer with lettuce, pile on the hot peri-peri tempeh, then top with a generous handful of crunchy slaw.
  4. Drizzle with extra peri-peri sauce if you like a proper kick. Wrap it up. Get stuck in.
