When you’re in need of a delicious, hearty meal, you can’t go wrong with meatballs! These vegan meatballs with apple sauce make a great dinner any night of the week.

Ingredients

12 Heura® Meatballs (or your choice of vegan meatballs)

1 red apple 

1 lemon, juiced 

50g raisins 

25g pine nuts 

Parsley 

Chives 

2 tsp curry powder

200ml almond cream 

Oil 

Salt 

When you’re in need of a delicious, hearty meal, you can’t go wrong with meatballs! These vegan meatballs with apple sauce make a great dinner any night of the week.

Method

  1. Cut the apple into medium-sized cubes, dip them into the lemon juice and set aside.  
  2. Place the raisins into a bowl of water to hydrate. 
  3. Wash and chop the parsley and chives. Set aside. 
  4. In a frying pan, brown the meatballs with a splash of oil. Once golden, remove from pan and set aside. 
  5. In the same pan, fry the apple cubes and pine nuts until lightly browned. Add the raisins and their water and cook on high heat for 2 minutes.  
  6. Add the meatballs and season with curry powder. Stir to mix and add the almond cream and salt. Simmer for 2-3 minutes. Garnish with the chopped parsley and chives.
