Hearty, packed with flavour and moreish, this Winter Broccoli Salad from Angus & Oink can either be enjoyed by itself or as a side dish.

Crisp broccoli florets are tossed with sweet raisins, grated carrot and thinly sliced red onion, then lightly dressed with red wine vinegar and nutty sesame oil. A sprinkle of pumpkin seeds and a touch of Angus & Oink Fries With That add crunch and a hint of savoury indulgence, making this vegan-friendly salad the perfect wholesome choice for chilly days.

Ingredients

1 head of broccoli, broken into florets
1 handful of raisins
1 red onion, thinly sliced
1 tsp red wine vinegar
2 tbsp sesame oil
1 carrot, grated
1 tbsp pumpkin seeds
1 tbsp Angus & Oink Fries With That

Method

  1. Trim the broccoli and finely slice the stalk and florets into thin slivers, keeping everything light and crisp.
  2. Blanch the broccoli for 2 minutes, then plunge it into cold water. Add it to a large bowl with the grated carrot, sliced red onion and raisins.
  3. Sprinkle over the pumpkin seeds.
  4. In a small bowl, whisk together the sesame oil, red wine vinegar and Angus & Oink Fries With That, then pour over the slaw.
  5. Toss well until everything is evenly coated, adjusting seasoning if needed.
  6. Let it sit for five minutes before serving to allow the flavours to settle.
